Creamy vegan broccoli soup

A super creamy, quic soup packed with nutrients and perfect served with a slice of toast.

Equipment

  • High speed blender
  • Pot to steam or microwave

Ingredients
  

  • 1 head broccoli
  • 1 can coconut cream
  • 2 tbsp coconut aminos or tamari
  • 1 clove garlic
  • 1 tbsp nutritional yeast optional but gives a cheesy flavour
  • 1 bunch coriander or basil for garnish
  • Some grated vegan cheese optional garnish
  • salt and pepper for seasoning

Instructions
 

  • Steam the broccoli for 5 minutes.
  • Add the remainder ingredients to your high speed blender, add the steamed broccoli.
  • Blend until smooth and creamy.
  • Re-heat in a pot or in the microwave.
  • Garnish with fresh herbs and vegan grated cheese if you like.

Notes

For a less calorie soup use a lite coconut milk or plain almond milk.
