Vegan Chocolate brownies

  • 2 Cups unbleached flour can use GF but must add 1 tsp cornflour
  • 1 Cup coconut sugar
  • 3/4 Cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 Cup warm water
  • 1 tsp instant coffee or 1 shot espresso
  • 4 Tbsp coconut oil
  • 1 tsp vanilla essence
  • 1/2 slab or less vegan dark chocolate
  • 1/2 cup crushed roasted almonds


  • Preheat over to 320 degrees Farenheit or 175 degrees Celcius.  
  • Sift flour, baking powder and cocoa together. Add salt, nuts and sugar.

  • If using instant coffee dissolve it into some warm water (4 Tbsp). Combine all the wet ingredients and then whisk into the flour.

  • Oil a pan or line with parchment paper and pour in the mix. Bake for 20 minutes or until a skewer/toothpick pulls out clean.

  • Chop the dark chocolate and sprinkle on top when straight out the oven. The chocolate will melt over the brownies. Wait until completely cooled down before removing from the baking tray and cutting.
