Let it be known, I love sweet potatoes. Sweet potatoes are so versatile and can be used in sweet and savoury dishes. I roast sweet potatoes every week, literally every week! I was so happy when I got a few in my Misfit box this past week. While prepping this weeks meals I decided a smoky sweet potato soup would go down well.

Before I tell you about this deliciously easy sweet potato soup let me tell you about Misfit.

A bit about Misfit box

When I lived in Thailand, all those years back, I would get a weekly box of organic produce delivered to my home. I loved the convenience of this and knowing everything was organic. This was especially important to me as I was eating 100% raw food at that point.

A friend of mine told me about Misfit market but they weren’t delivering to my area until a few weeks back. I immediately jumped on the opportunity to try them out.

What I got in my box?

A huge box filled with beautiful organic produce from potatoes, sweet potato, broccoli, aubergine, bell peppers, sweet peppers, lettuce, cucumber, onions, apples, pears and mangoes. They make a conscious effort to use recyclable packaging and their ‘plastic bags’ are biodegradable. I plan to test this out in my compost.

How much does it cost?

For $38 I purchased the large box said to feed 5 for a week but hey as a vegan we eat a lot of veggies and fruits. We don’t eat out frequently, so between my hubby and I the large box is a perfect quantity and totally worth the price for what you get.

What do you do with all this produce?

You get creative. While I totally get that everyone might not enjoy or love cooking as much as I do, the unknown and variety of produce challenges and inspires me to be creative. What makes this sweet potato soup smoky?

Along with sweet potatoes being my veggie love, I am obsessed with smoked paprika. I believe it’s a sin not to have this as part of your spice staples. Seriously, trust me when I say this will change your life. I use it so frequently because it just gives food such a great flavor.

Smoky sweet potato soup

An insanely delicious sweet potato soup for lunches and dinners. Perfectly seasoned serve with alone or with fresh toast.

Equipment

  • roasting tray
  • Blender

Ingredients

  • 3 medium sweet potatoes About 500g
  • 1 tbsp olive oil for roasting
  • 3 cups almond milk (750ml)
  • 1.5 tsp salt
  • 1 tsp fresh rosemary
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground pepper

Instructions

  • pre heat oven to 200C or 400F
  • Peel sweet potato, cut into cubes and in a bowl toss the olive oil over the cubes to coat them.
  • Roast for 30 minutes.
  • In a blender (or pot if using a stick blender) add the milk and remaining ingredients.
  • Once butternut has roasted, add to the milk micture and blend on high for a minute until thick and smooth.
  • Heat and serve.

Notes

If you don’t have garlic and onion powder, you can replace this with one clove fresh garlic and 1 small or 1/2 medium onion. You will need to first fry them in some oil before adding to your milk mixture. 
Soup will keep for 1 week in a sealed jar in the refrigerator.

    I’m not a huge sweet potato fan but with receiving a seasonal veggie box every two weeks I don’t really have a choice on what veggies I cook with. So last week I received sweet potatoes and I had no idea what to do with them. Enter TheHungryHerbivore and this recipe! I knew I had to give it a try! It was delicious! The smoked paprika definitely makes this dish a winner for me and will be my go to in the future when I have sweet potatoes in the house! 😀
