
I grew up on Mac n cheese
My mom would make a great Mac n cheese and often this was our meal twice a week. We had a running joke at home where we even said “Oh it’s a Mac n cheese night.” Sometimes, we asked for anything but a Mac n cheese because we got tired of eating it. It was delicious but it was loaded with dairy and often bacon bits which were the best kind of ones. I knew I had to create a vegan Mac n cheese sauce that would be perfect to eat often.

Finding an affordable recipe
Since being vegan I’ve often missed a good Mac n cheese. There are quite a few Mac n cheese sauce recipes online, however they are loaded with cashews. Don’t get me wrong, they are incredibly tasty, cashews make everything yummy, HOWEVER, cashews are an expensive ingredient to use for a weekly meal. I wanted to have my Mac n cheese without breaking the budget.

Welcome the Clean Mac n Cheese sauce.

P.S it’s great for nachos too.
Equipment
Let’s jump right in. All you need is a blender (immersion blender or jog will work) and a pot for equipment. Yup that’s it. Did I mention it’s an easy Mac n cheese sauce?

What’s tapioca flour?
It’s a flour made from cassava root. Tapioca is amazing for creating that sticky, thick cheese like consistency. Trust me when I say you need this in your pantry. It’s great for making vegan mozzarella too.

Mac n Cheese Sauce
Ingredients
- 4 large carrots
- 4 medium potatoes peeled
- 1 cup almond milk or plant milk of choice
- 1/4 cup olive oil
- 6 tbsp nutritional yeast
- 2 tbsp tapioca starch
- 2 cloves garlic
- 1 medium lemon juice
- 1 1/2 tsp salt
- 1 tsp mustard
- 1 tsp onion powder
- 1/4 tsp chilli flakes optional
- 1/4 tsp smoked paprika optional
Instructions
- Peel the carrots and potatoes and boil for 15-20 minutes until cooked.
- In a bowl, combine the milk, oil and all the spices/nutritional yeast except the starch.
- Once veggies are cooked, drain and add to blender.
- Add the milk mix. Once well blended, add the starch and blend again until smooth.
- Pour hot sauce over cooked pasta noodles or nachos.
Notes

TIP: Make this low carb using cauliflower instead of potatoes.
