If you’re not a nachos fan then I’m sorry we can’t be friends! Totally kidding but you have to try these so I can change your mind. These loaded nachos are EPIC! Seriously epic and unlike a dairy cheese loaded meaty nachos dish this will leave you feeling fantastic and ever so happy.

Why the nachos obsession?

I have memories of eating greasy cheesy loaded nachos at a Spur (South African chain restaurant) and while these tasted good I would always feel sluggish and uncomfortable after eating them.

When I went raw vegan I would make dehydrated corn chips and salsa, guac and cashew cream cheese and while tasty, this was a lot of effort and the chips were never crispy enough.

In my restaurant days not so long ago, I knew nachos had to be part of the menu. We served up a delicious wholesome bowl of nachos which was crazy popular. The other day I was craving some good old nachos and decided to make an epic loaded nachos plate.

It’s all about the cheese

Good nachos need cheese. I’m a lover of cashew cheese but in America these are on the pricey side to use for day to day cooking. I wanted to make something more affordable and using ingredients most have in their kitchen cupboards.

This recipe works super well for these nachos. Think Oozy, thick and cheesy. A batch of this cheese sauce and you can eat 4-6 different meals from it so it’s definitely worth making a batch and using it all week long.

The cheese flavor comes from nutritional yeast which has gained so much popularity and is a vegan pantry staple. Go get some!!

Balancing these epic loaded nachos

It’s important for me to balance out meals. I try to include fats, carbs and proteins in every meal. This makes me feel fuller for longer and more satisfied after eating.

In these nachos, the beans add some yummy smoky flavour and protein. The cilantro coconut rice, corn chips and cheese sauce offer carbs and some fats. The salsa offers a range of fresh veggies and the guac a healthy dose of fats. ]

These nachos are perfect for a special family or friends occasion where you want to impress. Add some tacos and you have an epic Mexican inspired feast.

There are a few components to making this epic nacho dish but don’t get discouraged. Each is quick and easy to make as long as you are organized. I recommend packing out all your ingredients, measuring them and then getting started to speed up your work flow.

  • Blender


Coconut cilantro rice 

  • 1 cup Jasmine rice
  • 1/2 tsp salt
  • 1 can coconut milk
  • 1/2 lime juiced
  • 4 sprigs fresh cilantro (coriander)

Mango salsa

  • 1 med mango
  • 1 small red onion
  • 1 small green pepper
  • 2 small tomatoes
  • 1/2 lime juice
  • salt and pepper to taste
  • 4 sprigs fresh cilantro

Smoky beans

  • 1 can black beans
  • 2 tsp soya sauce or tamari for gluten free
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil


  • 1 packet organic corn chips of choice


  • 1 med avocado
  • 1/2 lime juice
  • salt and pepper to taste
  • chili flakes optional

Coconut cilantro rice

  • In a medium pot, add 1 cup rice, 1 can coconut milk, 1.2 tsp salt and 1/2 cup water.
  • Bring to the boil on high. Once boiling reduce heat to low and cover with a lid. Cook for 15-20minutes until all liquid has evaporated. Refrain from stirring.

Mango salsa

  • Peel mango and dice into blocks along with the tomatoes, green pepper, onion and coriander.
  • Squeeze over 1/2 lime juice and add a dash of salt and pepper.

Smoky beans

  • Wash and drin 1 can of black beans.
  • Heat 1 tbsp olive oil and add the beans. Add the smoked paprika and soy sauce after 2 minutes. Cook for 2-3 more minutes until soy sauce has dried up. Remove from heat.


  • Scoop the avocado out the skin, using a fork, mash the avo.
  • Add 1/2 lime juice
  • Add salt and pepper to taste. Add chilli if you want it spicy.
