
If anyone out there doesn’t love a good brownie, they are missing out! I mean who can resist that chocolatey first bite of heaven? Okay maybe I’m going over board but I love brownies and if I could make every brownie in the world vegan I would. I mean who even needs dairy and eggs in these?
I once made these for a catering gig and they were demolished in minutes so trust me when I say, you gotta go make these NOW.




Vegan Chocolate brownies
Chocolate lovers, trust me when I say you need these in your life. Take them to every dinner party you get invited too and those invites will keep coming.
Ingredients
- 2 Cups unbleached flour can use GF but must add 1 tsp cornflour
- 1 Cup coconut sugar
- 3/4 Cup cocoa powder
- 1 tsp baking powder
- 1 tsp salt
- 1 Cup warm water
- 1 tsp instant coffee or 1 shot espresso
- 4 Tbsp coconut oil
- 1 tsp vanilla essence
- 1/2 slab or less vegan dark chocolate
- 1/2 cup crushed roasted almonds
Instructions
- Preheat over to 320 degrees Farenheit or 175 degrees Celcius.
- Sift flour, baking powder and cocoa together. Add salt, nuts and sugar.
- If using instant coffee dissolve it into some warm water (4 Tbsp). Combine all the wet ingredients and then whisk into the flour.
- Oil a pan or line with parchment paper and pour in the mix. Bake for 20 minutes or until a skewer/toothpick pulls out clean.
- Chop the dark chocolate and sprinkle on top when straight out the oven. The chocolate will melt over the brownies. Wait until completely cooled down before removing from the baking tray and cutting.
Notes
Try serving with coconut cream, vegan ice-cream and strawberries for something extra special. I loved it with So Delicious Ice cream.
