What is sofrito?

This sofrito recipe uses easy to find ingredients. Where ever you are in the world, you have no excuse not to try this. What is sofrito used in?
As mentioned I love using sofrito to spice a simple bean and rice dish. It takes it from being bland to a wonderful aromatic meal. While sofrito is used in many meat dishes, it works super well in vegetable dishes. Try this recipe and replace the other spices with the sofrito. You can also use it in a vegetable stir fry rice and get creative in the kitchen.
How long does sofrito last?
This sofrito recipe makes 250ml and can be kept for 3 months in the refrigerator if stored in an air tight container. You can double the recipe and freeze it in ice cube trays so you always have some on hand. This will last up to 1 year. I recommend once frozen, put all the iced sofrito blocks in a silicon ziplock bag or a sealed container to prevent any freezer smells from leaching into the blocks.

DO NOT taste this without it being cooked. The raw garlic and onion are overpowering. This sofrito works best when cooked. All you need to do is add a tablespoon or two to your fried beans or stew. Check back in on Thursday for a new recipe to use it in.
Without further ado, I present my 5 minute Sofrito recipe:
- Blender or food processor
- 1 medium onion
- 4 cloves garlic
- 1 bunch fresh coriander
- 1 tsp oregano
- 2 medium tomatoes
- 1 green bell pepper
- Place all the ingredients in a blender or food processor and pulse until finely chopped and combines.
