Even though it’s starting to warm up this side of the world, every now and again it will be a cooler day or a rainy day which makes me crave something comforting. As you might remember I’ve been loving soups this pregnancy and always looking for quick ways to make them. This creamy vegan broccoli soup always comes to mind when I’m pressed for time or too exhausted to make something else.

You might not be able to fly after eating broccoli but you will be fueling your body with an array of amazing vitamins, protein and cancer fighting compounds. Broccoli is high in vitamins A, B6, B9, C, E, B1, K as well as calcium, iron and magnesium. I include broccoli in my meals every week and always try to buy organic where I can.

With only 6 ingredients, how can it possibly be complicated? This is a steam, blend and heat soup which takes 15 minutes or less to make.

I love my Vitamix blender. {This is not a paid post, I genuinely love this product}. In winter it’s whipping up soups and sauces and in summer I’m blending up smoothies and nana ice-creams on the daily. I couldn’t be more grateful for this kitchen tool. If you don’t have a high speed blender and are really enjoying cooking more and more, I would suggest that this be your first big kitchen investment.

How to make things creamy without dairy?

In the vegan world, there are definitely not unlimited options as to how to make food creamy. In the dairy world, you have so many options to choose from however I’ve never felt restricted by living a vegan lifestyle. Here are my top 3 choices for making savory meals creamy without dairy:

  1. Coconut milk/cream – I use an organic one but if you struggle to find this look for one that has the least amount of ingredients and preservatives. Not all coconut milks/creams are good for you. Choose this for a nut free option.
  2. Cashew nuts – while these are a more expensive option cashews are so diverse and offer an unbelievable creaminess to soups and sauces.
  3. Tofu – yep you read right. I often use tofu to create a creamy like sauce or consistency. It has way less fat and more protein but can have a stronger taste depending on what you use it in. Silken tofu is best for ultimate creaminess.

Equipment

  • High speed blender
  • Pot to steam or microwave

Ingredients

  • 1 head broccoli
  • 1 can coconut cream
  • 2 tbsp coconut aminos or tamari
  • 1 clove garlic
  • 1 tbsp nutritional yeast optional but gives a cheesy flavour
  • 1 bunch coriander or basil for garnish
  • Some grated vegan cheese optional garnish
  • salt and pepper for seasoning

Instructions

  • Steam the broccoli for 5 minutes.
  • Add the remainder ingredients to your high speed blender, add the steamed broccoli.
  • Blend until smooth and creamy.
  • Re-heat in a pot or in the microwave.
  • Garnish with fresh herbs and vegan grated cheese if you like.

Notes

For a less calorie soup use a lite coconut milk or plain almond milk.
